Preheat the oven to 175 degrees Celsius and line a baking sheet with parchment paper.
Mix all ingredients except sea salt in your stand mixer using the paddle attachment.
Blend until all ingredients are well combined, but do not over mix.
Divide the dough into 2 equal portions. Roll each portion into a log and place them on the baking sheet.
Flatten the logs slightly and sprinkle with a little sea salt.
Bake for 13-16 minutes.
Remove from the oven and cut the logs diagonally into pieces while still warm.
Allow to cool on the baking sheet.
Allow the cookies to cool completely to room temperature before storing. Place the cookies in an air-tight container or a resealable plastic bag. This helps to prevent moisture from getting to the cookies and keeps them crispy.
